Cheesy Hamburger Potato Soup

Ingredients:

1 lb ground beef
2 tablespoons butter
1 small onion, finely chopped
2 cloves garlic, minced
4 cups diced potatoes (about 2–3 medium potatoes)
4 cups beef broth
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/2 cup heavy cream
1/4 cup cream cheese
1 1/2 cups shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup green onions, chopped (optional, for garnish)
Crispy cooked bacon bits (optional, for garnish)

Instructions:

1. In a large pot or Dutch oven, cook ground beef over medium-high heat until browned. Drain excess fat and set beef aside.
2. In the same pot, melt butter and sauté onion and garlic for 3–4 minutes until softened.
3. Add diced potatoes, beef broth, salt, pepper, smoked paprika, and thyme. Bring to a boil, then reduce heat and simmer for 15–20 minutes until potatoes are tender.
4. Use a potato masher or immersion blender to slightly mash some potatoes, leaving chunks for texture.
5. Stir in heavy cream and cream cheese until smooth and creamy.
6. Add shredded cheddar and Monterey Jack cheeses. Stir until fully melted into a thick, gooey, cheesy sauce.
7. Return the cooked ground beef to the pot. Mix until fully incorporated and the soup is thick and rich.
8. Serve hot, garnished with chopped green onions and optional bacon bits.
