Fiesta in a Pan
Ingredients:
- 1 pound ground beef or turkey
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded cheese (cheddar or Mexican blend)
- Tortilla chips
- Optional toppings: diced tomatoes, sour cream, chopped cilantro, sliced jalapeños
Instructions:
1. Preheat Oven: Preheat your oven to 350°F (175°C).
2. Cook Meat: In a large skillet, cook the ground beef or turkey over medium heat until browned. Drain excess fat.
3. Add Seasoning: Stir in taco seasoning according to the package instructions.
4. Combine Ingredients: Add black beans, corn, and diced tomatoes with green chilies to the skillet. Mix well and let simmer for a few minutes.
5. Layer in Pan: Spread the meat mixture evenly in a baking dish. Sprinkle shredded cheese over the top.
6. Bake: Bake in the preheated oven for about 10 minutes or until the cheese is melted and bubbly.
7. Add Toppings: Remove from oven and top with tortilla chips. Add any additional toppings like diced tomatoes, sour cream, chopped cilantro, or sliced jalapeños.
8. Serve: Serve immediately and enjoy!
