🌶️ Homemade Mexican Pizza
📝 Ingredients:
8 small flour tortillas
1 lb ground beef or ground turkey
1 packet taco seasoning
½ cup water
1 can (16 oz) refried beans
1 cup red enchilada sauce (or taco sauce)
2 cups shredded Mexican cheese blend
1 medium tomato, diced
½ cup sliced black olives (optional)
2 green onions, chopped
Cooking spray or oil (for crisping tortillas)
🔥 Directions:
Prep the Tortillas:
Preheat oven to 400°F (200°C).
Lightly spray both sides of each tortilla with cooking spray.
Bake tortillas on a baking sheet for about 5–7 minutes, flipping once, until golden and crispy. Set aside.
Cook the Meat:
In a skillet over medium heat, brown the ground beef until fully cooked. Drain any excess grease.
Add taco seasoning and water. Stir and simmer for about 5 minutes until thickened.
Warm the Beans:
Heat refried beans in a saucepan or microwave until spreadable.
Assemble the Pizzas:
On 4 tortillas, spread a layer of refried beans and then top with seasoned meat.
Place another tortilla on top of each to make a “pizza sandwich.”
Spoon enchilada (or taco) sauce over the top tortillas.
Sprinkle generously with shredded cheese, then top with diced tomatoes, olives, and green onions.
Bake & Serve:
Place assembled pizzas on a baking sheet.
Bake for 8–10 minutes, until cheese is melted and bubbly.
Slice into quarters and serve hot!
