Flavorful Baked Spiced Carrot & Ginger Patties! 🥕🧡✨

Ingredients:
2 cups (240g) grated carrots (about 3-4 medium carrots)
1 cup (185g) cooked quinoa OR 1/2 cup (60g) breadcrumbs (use gluten-free if needed)
1 tablespoon freshly grated ginger
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon ground turmeric
1/4 cup (30g) chickpea flour (or 1 large egg if not vegan)
2 tablespoons chopped fresh cilantro
1/2 teaspoon salt
1/4 teaspoon black pepper

Directions:
1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. Squeeze any excess moisture out of the grated carrots using your hands or a clean kitchen towel. This helps the patties hold together.
3. In a large bowl, combine the squeezed grated carrots, cooked quinoa (or breadcrumbs), grated ginger, cumin, coriander, turmeric, chickpea flour (or egg), chopped cilantro, salt, and pepper.
4. Mix thoroughly until all ingredients are well combined and the mixture holds together when pressed. If using chickpea flour and it seems too dry, add a tablespoon of water.
5. Form the mixture into 6 equal-sized patties, about 1/2 inch (1.3 cm) thick.
6. Place the patties on the prepared baking sheet.
7. Bake for 25-30 minutes, carefully flipping them halfway through, until they are golden brown, firm to the touch, and cooked through.
8. Let cool slightly before serving. They are delicious warm, perhaps with a dollop of yogurt or tahini sauce.
