Banana Pecan Caramel Muffins 🍌🥜🧁
Ingredients:
2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, room temperature
1/2 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup mashed ripe bananas (about 2-3 bananas)
1/2 cup sour cream
1 cup chopped pecans
1/2 cup caramel sauce
1 banana, sliced (for topping)
Additional chopped pecans (for topping)
Directions:

Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a medium bowl, whisk together flour, baking soda, and salt.
In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla extract.
Mix in mashed bananas and sour cream until well combined.
Gradually add the flour mixture to the banana mixture, mixing just until incorporated. Fold in chopped pecans.
Divide batter evenly among the muffin cups, filling each about two-thirds full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let muffins cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
Once cooled, drizzle caramel sauce over the top of each muffin. Garnish with banana slices and additional chopped pecans.
