Honey Walnut Shrimp
Ingredients:
1 pound large shrimp, peeled and deveined
1/2 cup walnuts
1/4 cup mayonnaise
2 tablespoons sugar-free honey substitute
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon olive oil
1/4 cup green onions, chopped (for garnish)
1. In a small saucepan, heat the olive oil over medium heat. Add the walnuts and toast them for about 3-5 minutes until golden brown, stirring frequently. Remove from heat and set aside to cool.
2. In a mixing bowl, combine the mayonnaise, sugar-free honey substitute, lemon juice, garlic powder, salt, and black pepper. Mix well until smooth.
3. In a large skillet, add the shrimp and cook over medium-high heat for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from heat.
4. In a large bowl, combine the cooked shrimp with the sauce and toss until the shrimp are evenly coated.
5. Add the toasted walnuts to the shrimp mixture and gently fold them in.
6. Serve immediately, garnished with chopped green onions.
