Shrimp and Spinach Stuffed Pasta Rolls with Roasted Red Pepper Cream 🌶️
INGREDIENTS:
12 lasagna noodles
1 lb shrimp, peeled and deveined
2 cups fresh spinach, chopped
1/2 cup ricotta cheese
1/2 cup mozzarella cheese, shredded
1/4 cup Parmesan cheese, grated
1 egg
2 cloves garlic, minced
2 tablespoons olive oil
Salt and pepper to taste
Red Pepper Sauce:
1 cup roasted red peppers
1/2 cup heavy cream
1 large garlic clove, peeled
1/2 tablespoon smoked paprika
1 tablespoon fresh basil, chopped
1 tablespoon lemon juice
Salt and pepper to taste
Extra grated cheese for topping
DIRECTIONS:
Preheat oven to 375°F. Cook lasagna noodles according to package.
Sauté shrimp and garlic in olive oil until pink, 3-4 minutes.
Mix spinach, cheeses, egg, and cooked shrimp. Season with salt and pepper.
Spread filling on noodles, roll up, place seam-side down in baking dish.
Blend roasted peppers, cream, garlic, paprika, and lemon juice until smooth. Season with salt and pepper. Pour over rolls.
Cover and bake 25 minutes. Uncover, add cheese, bake 10 more minutes until bubbly.
