Super moist Carrot Cake
Recipe:
2 cups all purpose flour
1 1/2 cup sugar
2 teaspoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
3 cups carrots – fresh grated
1/4 cup apple sauce
1/2 cup vegetable oil
1/2 cup water
3 eggs
Frosting:
8 oz. cream cheese, softened
4 tablespoons unsalted butter, softened
1/3 cup dark brown sugar
1/2 cup powdered sugar
1 teaspoon vanilla extract
Garnish: crushed pecans
Steps:
Preheat the oven to 350 degrees.
Grease a rectangular baking pan.
In a large mixing bowl, whisk together the dry cake ingredients. set aside.
In a large bowl, add oil, water, apple sauce and eggs. Add grated carrots. Mix well till creamy. Add the dry ingredients. Mix with spatula, scraping the sides of the bowl upon occasion.
Pour into the greased baking pan.
Bake for 40-45 minutes, just until a toothpick inserted in the center comes out clean. Let it cool before adding the frosting. Sprinkle extra pecans on top. Enjoy!
