Vibrant Protein-Packed Salad Bowl 🥗🥑🍅
Ingredients:
2 boiled eggs 🥚🥚
1 ripe avocado, sliced 🥑
1/2 cup cherry tomatoes, halved 🍅
1/2 cucumber, diced 🥒
1/2 cup canned chickpeas, rinsed and drained 🧆
Fresh parsley or cilantro, chopped 🌿
Salt & pepper to taste 🧂
Optional: drizzle of olive oil & lemon juice 🍋🫒
Instructions:
Boil your eggs for 7–8 minutes, then peel and slice in half.
Prep your veggies: slice the avocado, dice the cucumber, halve the cherry tomatoes.
In a bowl, arrange everything nicely: eggs, avocado, cucumber, tomatoes, and chickpeas.
Sprinkle with chopped herbs, salt, pepper, and optional olive oil & lemon juice.
