π Ingredients:
For the Steak:
1 lb skirt, flank, or sirloin steak
Salt & black pepper to taste
1 tsp garlic powder
1 tbsp olive oil
2 tbsp butter
2 garlic cloves, smashed
Fresh rosemary or thyme (optional for basting)
For the Sides:
2 cups frozen or fresh-cut fries
1 zucchini, sliced
Β½ red bell pepper, sliced
Β½ red onion, thick-cut
1 small eggplant, sliced
Salt, pepper & olive oil (for roasting)
π₯ Instructions:
1. Cook the Fries:
Bake or air-fry fries at 425Β°F until crispy and golden (about 20β25 mins).
Season with salt while hot.
2. Roast the Veggies:
Toss veggies with olive oil, salt & pepper.
Roast at 400Β°F for 15β20 minutes or until browned and tender.
3. Sear the Steak:
Pat steak dry, season with salt, pepper, and garlic powder.
Heat olive oil in a cast iron pan over high heat.
Sear steak 2β3 mins per side for medium-rare.
Add butter, garlic, and herbs. Baste for 30 seconds.
Let steak rest for 5 mins, then slice against the grain.
