Tasty Chicken Cordon Bleu Meatloaf

Ingredients:

1 lb ground chicken
1/2 lb ground pork
1/2 cup bread crumbs
1/4 cup milk
1 large egg, beaten
1/4 cup grated Parmesan cheese
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
4 slices cooked ham
4 slices Swiss cheese
1/4 cup Dijon mustard

Instructions:

1. Preheat your oven to 375°F (190°C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine the ground chicken, ground pork, bread crumbs, milk, egg, Parmesan cheese, thyme, salt, and pepper. Gently mix until just combined; do not overmix.
3. Spread half of the meat mixture evenly in the prepared loaf pan.
4. Top the meat mixture with the ham slices, followed by the Swiss cheese slices.
5. Spread a thin layer of Dijon mustard over the cheese.
6. Cover the cheese with the remaining meat mixture, pressing down gently to compact it.
7. Bake for 50-60 minutes, or until the internal temperature reaches 165°F (74°C). A meat thermometer inserted into the thickest part of the loaf will ensure it's cooked through.
8. Let the meatloaf rest for 10 minutes before slicing and serving. This allows the juices to redistribute, resulting in a more tender and flavorful loaf. Serve warm and enjoy!
