Loaded Potato & Meatloaf Casserole 🥔🍖🧀

All your comfort food favorites in one dish—juicy meatloaf, creamy mashed potatoes, and melty cheese. This hearty casserole is weeknight dinner perfection!



🛒 Ingredients

For the Meatloaf Layer:
• 1.5 lbs ground beef
• 1 onion, finely chopped
• 2 cloves garlic, minced
• ½ cup breadcrumbs
• ¼ cup milk
• 1 egg
• 1 tbsp Worcestershire sauce
• 1 tsp salt
• ½ tsp black pepper
• ½ cup ketchup

For the Potato Layer:
• 2 lbs potatoes, peeled & sliced
• ½ cup sour cream
• ¼ cup milk
• 2 tbsp butter
• 1 cup shredded cheddar cheese
• ¼ cup chopped green onions
Salt & pepper, to taste



📌 Directions

1️⃣ Preheat Oven
Preheat to 375°F (190°C) and grease a baking dish.

2️⃣ Make the Meatloaf
In a bowl, mix together ground beef, onion, garlic, breadcrumbs, milk, egg, Worcestershire, salt, and pepper.
Press mixture evenly into the bottom of the baking dish.
Spread ketchup over the top.
Bake for 25 minutes.

3️⃣ Prepare the Potatoes
While the meatloaf bakes, boil the potatoes until tender (about 15 minutes).
Drain and mash with sour cream, milk, butter, and season with salt & pepper.

4️⃣ Assemble the Casserole
Spread mashed potatoes over the partially baked meatloaf.
Top with shredded cheddar cheese and green onions.

5️⃣ Bake Again
Return to the oven for another 20 minutes, until the cheese is melted and bubbly.

6️⃣ Rest & Serve
Let rest for 10 minutes before slicing. Serve warm and dig in!
