Spinach Alfredo with Seared Salmon and Herbs

Creamy Spinach Alfredo Pasta with Herbed Salmon Filets

Ingredients:

2 salmon fillets (skin-on or skinless)

1 tablespoon olive oil

Salt and freshly ground pepper

8 oz fettuccine or linguine pasta

2 tablespoons butter

3 cloves garlic, minced

1 ½ cups fresh spinach, chopped

1 cup heavy cream

½ cup grated Parmesan cheese

¼ teaspoon ground nutmeg

1 tablespoon chopped fresh parsley

1 teaspoon chopped fresh dill (optional)

Zest of 1 lemon

Directions:

Bring a large pot of salted water to a boil and cook pasta according to package instructions. Drain and set aside.

Season salmon fillets with salt and pepper. Heat olive oil in a nonstick skillet over medium-high heat.

Sear salmon fillets skin-side down (if applicable) for about 4-5 minutes, then flip and cook for another 3-4 minutes until golden and cooked through. Remove and set aside.

In a separate large skillet, melt butter over medium heat. Add garlic and sauté for 1 minute until fragrant.

Stir in chopped spinach and cook for 2-3 minutes until wilted.

Reduce heat to low. Add cream, Parmesan, nutmeg, salt, and pepper. Stir continuously until the sauce thickens slightly, about 3-5 minutes.

Add cooked pasta to the skillet and toss to coat in the creamy spinach Alfredo sauce.

Plate the pasta and top with seared salmon. Garnish with parsley, dill, and lemon zest. Serve hot.
