Tropical Strawberry Split Cake 🍓🍍

Ingredients:

1 packet of digestive biscuits, crushed
100g melted butter
500g cream cheese, softened
200ml fresh cream
1 tin crushed pineapple, drained
250g fresh strawberries, halved
1/2 cup sugar
1 packet strawberry jelly
1 banana, sliced
Fresh mint leaves (for garnish)
Instructions:

📝 Mix crushed biscuits and melted butter, press into a cake pan, and refrigerate to set.
📝 Whip the cream cheese and sugar until smooth.
📝 Fold in the fresh cream and drained pineapple into the cream cheese mixture.
📝 Pour the mixture over the biscuit base and refrigerate until firm.
📝 Prepare the strawberry jelly according to the packet and let it cool slightly.
📝 Arrange the strawberry halves and banana slices over the cake.
📝 Pour the cooled jelly over the fruit and refrigerate until fully set.
📝 Garnish with fresh mint leaves before serving.
Notes:
