Easy & Healthy No-Bake Chocolate Tahini Date Bars (Vegan & Gluten-Free!) 🍫πŸ₯œπŸ˜‹

ingredients:
- 1 Β½ cups pitted Medjool dates (about 250 grams)
- Β½ cup tahini (120 grams)
- ΒΌ cup unsweetened cocoa powder (20 grams)
- ΒΌ cup rolled oats (gluten-free if needed) (25 grams)
- 2 tablespoons maple syrup (30 ml)
- 1 teaspoon vanilla extract (5 ml)
- Pinch of salt
- Optional topping: sesame seeds or chopped nuts

directions:
1. Line an 8x8 inch (20x20 cm) baking pan with parchment paper.
2. In a food processor, combine the pitted dates and process until a smooth paste forms. This may take a few minutes.
3. Add the tahini, cocoa powder, rolled oats, maple syrup, vanilla extract, and salt to the food processor. Process until everything is well combined and the mixture is smooth and slightly sticky.
4. Transfer the mixture to the prepared baking pan and press it down evenly with your hands or the back of a spoon.
5. If desired, sprinkle sesame seeds or chopped nuts over the top.
6. Place the pan in the refrigerator for at least 2 hours to allow the bars to firm up.
7. Once firm, remove from the refrigerator, lift the parchment paper out of the pan, and cut into squares or bars. Store in an airtight container in the refrigerator.
