Chocolate Fudge Cupcakes 🍫🧁
Ingredients
For the cupcakes:
1 cup (125g) all-purpose flour
½ cup (50g) unsweetened cocoa powder
1 tsp baking soda
½ tsp baking powder
¼ tsp salt
¾ cup (150g) granulated sugar
½ cup (100g) brown sugar
½ cup (120ml) vegetable oil
2 large eggs
1 tsp vanilla extract
½ cup (120ml) buttermilk (or milk + 1 tsp vinegar)
½ cup (120ml) hot coffee (or hot water)
For the chocolate fudge frosting:
½ cup (115g) unsalted butter, softened
1 cup (175g) semi-sweet chocolate chips, melted
2 cups (240g) powdered sugar
¼ cup (60ml) heavy cream (adjust for consistency)
1 tsp vanilla extract
Pinch of salt
Instructions
Preheat & Prep
Preheat oven to 350°F (175°C).
Line a 12-cup muffin tin with cupcake liners.
Make the Cupcake Batter
In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
In a separate bowl, whisk sugars, oil, eggs, and vanilla until combined.
Mix in buttermilk, then gradually add dry ingredients.
Stir in hot coffee (batter will be thin—this makes the cupcakes extra moist!).
Bake
Fill cupcake liners about ⅔ full.
Bake for 18-22 minutes, or until a toothpick comes out clean.
Let cool completely before frosting.
Make the Fudge Frosting
Beat butter until creamy.
Add melted chocolate, powdered sugar, cream, vanilla, and salt.
Beat until smooth and fluffy (add more cream if needed).
Frost & Enjoy
Pipe or spread frosting on cupcakes.
Garnish with chocolate shavings or sprinkles!
