This recipe is a total game-changer! I made these for a family get-together, and they disappeared before I could grab a second piece. Tangy, creamy, and topped with the fluffiest meringueβthese bars are pure sunshine on a plate!
Ingredients:
For the Crust:
1 1/2 cups graham cracker crumbs
1/2 cup unsalted butter (melted)
1/4 cup granulated sugar
For the Lemon Filling:
1 cup granulated sugar
1/4 cup all-purpose flour
1/4 cup cornstarch
1 1/2 cups water
4 large egg yolks
1/2 cup fresh lemon juice
1 tablespoon lemon zest
For the Meringue:
4 large egg whites
1/2 cup granulated sugar
1/4 teaspoon cream of tartar
Directions:
Preheat the oven to 350Β°F (175Β°C). Grease and line an 8x8-inch baking dish with parchment paper.
Make the crust: Mix graham cracker crumbs, melted butter, and sugar. Press evenly into the baking dish. Bake for 8 minutes, then let it cool.
Prepare the lemon filling: In a saucepan, whisk together sugar, flour, cornstarch, and water. Cook over medium heat until thickened. Whisk egg yolks with a bit of the hot mixture, then slowly stir them back into the pan. Add lemon juice and zest. Pour the filling over the crust.
Whip the meringue: Beat egg whites and cream of tartar until soft peaks form. Gradually add sugar, beating until stiff peaks form. Spread the meringue over the lemon filling, sealing the edges.
Bake: Return to the oven and bake for 10β12 minutes until the meringue is golden brown. Cool completely before slicing into bars.
