🍫✨ Raspberry Chocolate Lava Cupcakes
Rich, fudgy chocolate cupcakes bursting with juicy raspberries and melty chocolate—finished with a luscious raspberry chocolate ganache for the ultimate treat!
Ingredients
For the Cupcakes:
1 cup all-purpose flour
½ cup cocoa powder
½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, melted
1 cup powdered sugar
2 large eggs
2 tsp vanilla extract
1 cup fresh raspberries
1 cup semi-sweet chocolate chips
For the Raspberry Chocolate Ganache (Optional):
1 cup heavy cream
1 cup semi-sweet chocolate chips
1 tbsp raspberry jam
Instructions
1 Preheat & Prep: Heat oven to 375°F (190°C). Line a 12-cup muffin tin with liners.
2 Mix Dry Ingredients: In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
3 Mix Wet Ingredients: In a separate bowl, whisk melted butter, powdered sugar, eggs, and vanilla until smooth.
4 Combine & Fold: Gradually add dry ingredients to wet ingredients, stirring until just combined. Gently fold in raspberries and chocolate chips.
5 Bake: Divide batter evenly into liners. Bake for 18–20 minutes until edges are set but centers remain slightly soft. Let cool for 5 minutes before transferring to a wire rack.
6 Make Ganache (Optional): Heat heavy cream until warm (not boiling). Pour over chocolate chips and let sit for 2 minutes. Stir in raspberry jam until smooth. Drizzle over cooled cupcakes.
