Gluten-Free Vegetable Quiche
Ingredients:

1 tablespoon olive oil

1/2 onion, diced

1/2 cup bell pepper, diced

1/2 cup zucchini, diced

1/2 cup spinach, chopped

1/2 cup shredded cheddar cheese

1/2 cup milk

4 large eggs

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon paprika

1/4 teaspoon garlic powder

Directions:

Preheat your oven to 350°F (175°C) and grease a pie dish or quiche pan.

Heat olive oil in a skillet over medium heat. Add the onion, bell pepper, and zucchini. Cook until the vegetables are soft, about 5 minutes.

Stir in the chopped spinach and cook for another 2 minutes until wilted. Remove from heat and set aside.

In a bowl, whisk together eggs, milk, salt, pepper, paprika, and garlic powder.

Add the cooked vegetables and shredded cheddar cheese to the egg mixture and stir to combine.

Pour the mixture into the prepared pan and bake for 30-35 minutes, or until the quiche is set and lightly golden.
