Classic Smash Burgers with Caramelized Onions & Cheese 🍔🧀
Ingredients:
1 lb ground beef (80/20)
1 small onion, thinly sliced
4 slices American cheese
4 soft burger buns (potato or brioche)
1 tbsp butter
Salt & black pepper
1 tbsp neutral oil (vegetable or canola)
Special sauce (optional)
Instructions:
Preheat your griddle or cast-iron skillet over medium-high heat. Lightly oil the surface.
Caramelize the onions: Melt butter in a pan, add sliced onions, and cook over medium heat until golden and soft (10-15 minutes). Set aside.
Form the patties: Divide the ground beef into 4 balls (about 2.5 oz each). Do not overwork the meat.
Smash the patties: Place a beef ball on the hot surface, press it down firmly with a spatula until very thin. Season with salt and pepper.
Cook until crispy: Let the patties cook undisturbed for 2 minutes until the edges are browned and crispy. Flip, immediately add cheese, and cook for another minute.
Toast the buns: Butter the buns and toast them in the pan until golden brown.
Assemble: Place a cheeseburger patty on the bottom bun, top with caramelized onions, add another patty (for double smash burgers), and finish with the top bun. Add special sauce if desired.
Serve and enjoy!
