Chicken Florentine
Ingredients:
2 boneless, skinless chicken breasts
Salt and pepper, to taste
2 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
1/2 cup chicken broth
1/2 cup grated Parmesan cheese
1 tsp Italian seasoning
2 cups fresh spinach
1/2 cup cherry tomatoes, halved (optional)
Instructions:
Season chicken breasts with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add chicken and cook for 5-6 minutes per side until golden brown and cooked through. Remove and set aside.
In the same skillet, melt butter and sauté garlic for 30 seconds.
Pour in heavy cream and chicken broth, then stir in Parmesan cheese and Italian seasoning. Simmer for 2-3 minutes until slightly thickened.
Add spinach and cook until wilted. Stir in cherry tomatoes if using.
Return chicken to the skillet, spoon sauce over the top, and simmer for 2 more minutes.
Serve warm and enjoy!
