John Wayne Casserole 🥩🧀
This hearty and flavorful John Wayne Casserole is a comforting dish that's perfect for any weeknight dinner. Packed with ground beef, veggies, cheese, and a creamy ranch sour cream topping, it's sure to become a family favorite in no time!
Ingredients:
- 1 ½ pounds lean ground beef
- 2 cups onion, diced
- ½ cup bell pepper, diced
- 1 ounce taco seasoning (1 packet)
- 1 1/2 cups Cheddar cheese, divided use
- ½ cup sour cream
- ½ cup mayonnaise
- 2 tablespoons Ranch seasoning, dry
- 10 ounces Rotel diced tomatoes with green chilies
- 2 cups Bisquick, or favorite biscuit mix
- 1 1/4 cup water, divided
Directions:
1. Preheat the oven to 350 degrees F (175 degrees C).
2. Spray a 13x9-inch baking pan with non-stick cooking spray.
3. In a large skillet, brown the ground beef over medium heat. Drain off any excess grease.
4. Add the diced onion, bell pepper, taco seasoning, and 1/2 cup of water to the skillet. Stir until well blended.
5. Bring the mixture to a simmer, then cover and cook for about 10 minutes, or until the onion and pepper are soft.
6. In a medium mixing bowl, combine the sour cream, mayonnaise, 1/2 cup of Cheddar cheese, and dry Ranch seasoning. Whisk until smooth and blended. Set aside.
7. In a large bowl, mix together the Bisquick and 3/4 cup of water to make a soft dough. Add more water if needed.
8. Gently press the dough into the bottom of the prepared baking pan and bake for 5 minutes, just until set. Remove from the oven.
9. Spread the ground beef mixture evenly over the biscuit layer.
10. Next, spread the Rotel diced tomatoes over the ground beef layer.
11. Spoon the sour cream mixture over the tomatoes and gently spread it over the top.
12. Finish by sprinkling the remaining Cheddar cheese over the casserole.
13. Bake for 25 to 30 minutes, or until the biscuit layer is fully cooked and the casserole is heated through.
