Hot humid summer days call for Caprese Chickpea Pasta Salad. It’s light, refreshing and tasty, great made in advance for a meal prep option and keeps well in the fridge for a few days!
To make it I used chickpea rotini cooked as directed on package with marinated mozzarella balls, organic grape tomatoes, fresh basil, capers, the olive oil marinade from the mozzarella balls, a splash of red wine vinegar, sea salt and cracked black pepper. If you can’t find marinated mozzarella you can easily do it yourself by tossing in extra virgin olive oil, red wine vinegar, garlic, dried Italian seasoning, salt and pepper to taste. and perfect for a hot day.
