Pistachio Ooey Gooey Butter Cake
Ingredients:
1 box yellow cake mix
1/2 cup unsalted butter, melted
1 large egg
8 oz cream cheese, softened
3 large eggs
1 teaspoon vanilla extract
1 box (3.4 oz) pistachio instant pudding mix
1 cup powdered sugar
1/2 cup chopped pistachios (for topping)
Preheat the oven to 350°F. Grease a 9x13-inch baking dish.
In a mixing bowl, combine the yellow cake mix, melted butter, and 1 egg. Mix until well combined and press the mixture evenly into the bottom of the prepared baking dish.
In another bowl, beat the softened cream cheese until smooth. Add the 3 eggs, vanilla extract, pistachio pudding mix, and powdered sugar. Mix until well blended and smooth.
Pour the cream cheese mixture over the cake layer in the baking dish. Sprinkle the chopped pistachios on top.
Bake for 40-45 minutes, or until the edges are golden and the center is set but still slightly gooey. Allow to cool for at least 30 minutes before slicing.
