Tomato & Balsamic Spaghetti with Fresh Basil & Burrata

Ingredients:
12 oz spaghetti

2 tbsp olive oil

3 cloves garlic, thinly sliced

2 cups cherry tomatoes, halved

2 tbsp balsamic glaze

Salt and freshly ground black pepper, to taste

½ tsp crushed red pepper flakes (optional)

1 ball fresh burrata cheese

¼ cup fresh basil leaves, torn

Extra balsamic glaze and olive oil for drizzling

Directions:
Cook the Pasta: Bring a large pot of salted water to a boil. Cook spaghetti until al dente according to package instructions. Reserve ½ cup of pasta water, then drain and set aside.

Sauté Tomatoes: In a large skillet, heat olive oil over medium heat. Add garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and sauté for 5–6 minutes until softened and slightly blistered.

Combine & Toss: Add the cooked spaghetti to the skillet along with the reserved pasta water. Drizzle in the balsamic glaze and toss to coat evenly. Season with salt, black pepper, and red pepper flakes.

Finish & Serve: Transfer the pasta to serving plates. Tear the burrata and place over the top. Garnish with fresh basil, and drizzle with additional balsamic glaze and olive oil. Serve immediately.
