Garlic Butter Salmon with Spinach & Mushrooms in Creamy Sauce
Ingredients:
4 salmon fillets
2 tablespoons butter
4 cloves garlic, minced
8 ounces mushrooms, sliced
4 cups fresh spinach
1 cup heavy cream
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon lemon juice
Fresh parsley, chopped (for garnish)
Directions:
In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
Next, add the sliced mushrooms to the skillet and cook until they are tender and browned, which should take around 5 minutes.
Stir in the fresh spinach and cook until wilted, about 2-3 minutes.
Pour in the heavy cream, then season with salt, black pepper, and lemon juice. Allow the mixture to simmer for a few minutes until it thickens slightly.
While the sauce is simmering, heat another skillet over medium-high heat. Season the salmon fillets with salt and pepper, then place them in the skillet. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.
Once the salmon is done, serve it over the creamy spinach and mushroom sauce. Garnish with fresh parsley before serving.
