Dreamy Honey Peach Cupcakes with a Cream Cheese Surprise
Ingredients:
1 ½ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
½ cup unsalted butter, softened
¾ cup granulated sugar
2 large eggs
1 tsp pure vanilla extract
½ cup sour cream
½ cup diced ripe peaches
2 tbsp honey
For the Cream Cheese Filling:
6 oz cream cheese, softened
¼ cup powdered sugar
½ tsp vanilla extract
For the Honey Peach Frosting:
½ cup unsalted butter, softened
4 oz cream cheese, softened
2 tbsp honey
1 ½ cups powdered sugar
2 tbsp peach puree or finely diced peaches
Directions:
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with cupcake liners.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
In a large mixing bowl, beat butter and sugar together until light and fluffy. Add eggs one at a time, then stir in vanilla extract and sour cream until smooth.
Slowly add dry ingredients to the wet mixture, stirring until just combined. Fold in diced peaches and honey.
In a separate bowl, beat cream cheese, powdered sugar, and vanilla extract until creamy.
Fill each cupcake liner about ⅓ full with batter, add a heaping teaspoon of cream cheese mixture to the center, then top with remaining batter until ¾ full.
Bake for 18–22 minutes or until the tops spring back and a toothpick inserted around the edge comes out clean. Cool completely.
For the frosting, beat butter and cream cheese until fluffy. Add honey, powdered sugar, and peach puree. Mix until smooth and pipe onto cooled cupcakes.
