Death by Chocolate No-Bake Cheesecake Bars
Ingredients:
For the crust:
2 cups chocolate cookie crumbs (like Oreos, without filling)
1/2 cup unsalted butter, melted
For the fudge layer:
1 cup semi-sweet chocolate chips
1/2 cup heavy cream
For the chocolate cheesecake layer:
16 oz cream cheese, softened
1 cup powdered sugar
1/2 cup cocoa powder
1 teaspoon vanilla extract
1 1/4 cups whipped topping or whipped cream
For the topping:
1 cup chocolate chips or curls
Optional: chocolate syrup drizzle
Directions:
Mix chocolate cookie crumbs with melted butter until evenly combined. Press into a parchment-lined 9x9-inch pan. Chill in freezer while preparing fudge layer.
Heat heavy cream in a small saucepan until steaming. Pour over chocolate chips and let sit for 2 minutes. Stir until smooth. Spread fudge over the crust and return to the freezer for 15 minutes.
In a large bowl, beat cream cheese until fluffy. Add powdered sugar, cocoa powder, and vanilla. Mix until smooth and creamy. Gently fold in whipped topping until well combined.
Spread the cheesecake layer evenly over the fudge layer. Smooth the top.
Sprinkle chocolate chips or curls generously over the top. Optional: drizzle with chocolate syrup.
Chill in the fridge for at least 4 hours, or overnight for best texture. Slice into bars and serve cold.
