Crockpot French Onion Meatloaf with Melted Swiss Cheese
Ingredients:
For the Meatloaf:
1.5 lbs ground beef (80/20 or 85/15)
1 large onion, thinly sliced
2 cloves garlic, minced
1/2 cup breadcrumbs (panko or regular)
1/4 cup beef broth
2 tablespoons Worcestershire sauce
1 tablespoon Dijon mustard
1 egg, lightly beaten
1 teaspoon dried thyme
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
For the Topping:
6-8 slices Swiss cheese
Fresh parsley or thyme, chopped (for garnish)
Directions:
Caramelize the Onions:
Heat a little olive oil in a skillet over medium-low heat.
Add the sliced onions and cook, stirring occasionally, until caramelized (about 20-30 minutes).
In the last minute of cooking, add the minced garlic.
Prepare the Meatloaf Mixture:
In a large bowl, combine the ground beef, half of the caramelized onions (reserve the rest for the topping), breadcrumbs, beef broth, Worcestershire sauce, Dijon mustard, egg, thyme, salt, pepper, and Parmesan cheese.
Mix gently with your hands until just combined. Avoid overmixing.
Shape the Meatloaf:
Shape the meat mixture into a loaf and place it in the crockpot.
Cook the Meatloaf:
Spread the remaining caramelized onions over the top of the meatloaf.
Cover and cook on low for 4-6 hours or on high for 2-3 hours, until the meatloaf reaches an internal temperature of 160°F (71°C).
Add the Swiss Cheese:
In the last 15-20 minutes of cooking, lay the Swiss cheese slices over the top of the meatloaf.
Let the cheese melt during the remaining cooking time.
Garnish and Serve:
Once cooked, remove the meatloaf from the crockpot and let it rest for a few minutes before slicing.
Garnish with freshly chopped parsley or thyme.
Serve hot.
