Gourmet BBQ Chicken Pizza Recipe

Ingredients:
For the Dough:
2 ½ cups (300g) bread flour (or all-purpose flour)
1 tsp instant yeast
1 tsp sugar
1 tsp salt
1 cup (240ml) warm water
2 tbsp olive oil
For the Toppings:
1 cup cooked grilled chicken (shredded or diced)
¾ cup smoky BBQ sauce (divided—some for base, some for chicken)
1 ½ cups shredded mozzarella cheese (or a mix of mozzarella & smoked gouda)
½ cup caramelized red onions (thinly sliced & sautéed with a pinch of sugar)
½ cup roasted bell peppers (red & yellow, sliced)
2 tbsp fresh cilantro leaves
Olive oil & cornmeal (for crust texture)
Instructions:
1. Prepare the Dough:
In a bowl, mix flour, yeast, sugar, and salt. Add warm water and olive oil, kneading until smooth (~5-7 mins).
Cover and let rise for 1 hour (or until doubled).
2. Prep Toppings:
Toss grilled chicken in 2 tbsp BBQ sauce. Caramelize onions in a pan with olive oil and a pinch of sugar.
Roast bell peppers (or use jarred) and chop cilantro.
3. Assemble the Pizza:
Preheat oven to 475°F (245°C) with a pizza stone or inverted baking sheet inside.
Roll out dough on a floured surface, then transfer to a cornmeal-dusted peel or parchment paper.
Brush crust edges with olive oil for crispiness.
Spread a thin layer of BBQ sauce over the dough, leaving a border.
Add mozzarella, then chicken, caramelized onions, and bell peppers.
4. Bake:
Slide pizza onto the hot stone/baking sheet. Bake for 12-15 mins until crust is golden and cheese bubbles.
For extra crispiness, broil for 1-2 mins (watch closely!).
5. Finish & Serve:
Drizzle with extra BBQ sauce, sprinkle cilantro, and let cool slightly.
