The Original Potato Salad That Will Steal Your Heart
Ingredients:
6 medium-sized potatoes (Yukon Gold or Russet)
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon apple cider vinegar
1/4 cup finely chopped red onion
2 boiled eggs, chopped
1/4 cup chopped celery
1 tablespoon fresh parsley, chopped
Salt and pepper, to taste
Optional: 1/4 teaspoon smoked paprika for a twist
Directions:
Cook the Potatoes: Start by peeling (optional) and chopping the potatoes into bite-sized cubes. Boil them in salted water for about 10-12 minutes, or until they are fork-tender. Drain the potatoes and let them cool slightly.
Prepare the Dressing: In a large mixing bowl, combine mayonnaise, Dijon mustard, apple cider vinegar, salt, and pepper. Stir until well blended. If you're adding a smoky twist, mix in smoked paprika at this stage.
Mix the Salad: Once the potatoes are cooled enough to handle, add them to the dressing. Gently toss to coat the potatoes without mashing them.
Add the Vegetables and Eggs: Add the chopped red onion, celery, and boiled eggs to the bowl. Stir gently to incorporate all the ingredients together.
Chill and Serve: For the best flavor, cover the potato salad and refrigerate for at least 1 hour before serving. Garnish with freshly chopped parsley before serving.
