Creamy Pasta Alfredo with Mushrooms & Spinach 🍄
Ingredients:
12 oz fettuccine or your favorite pasta
2 tablespoons butter
2 cloves garlic, minced
8 oz mushrooms, sliced
2 cups fresh spinach
1 cup heavy cream
1 cup grated Parmesan cheese
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon nutmeg (optional)
Fresh parsley for garnish (optional)
Directions:
Cook the pasta according to package directions. Drain and set aside, reserving about 1/2 cup of the pasta water.
In a large skillet, melt butter over medium heat. Add garlic and sauté for about 30 seconds.
Add the sliced mushrooms and cook for 5–7 minutes until tender and lightly browned.
Stir in the spinach and cook until wilted (about 1–2 minutes).
Pour in the heavy cream and bring to a gentle simmer. Stir in Parmesan cheese, salt, pepper, and nutmeg if using.
Let the sauce simmer for 2–3 minutes, stirring often, until it thickens slightly.
Add the cooked pasta to the skillet. Toss everything together until well coated, adding a splash of reserved pasta water if needed to loosen the sauce.
Serve hot, garnished with fresh parsley if desired.
