Roasted Boston Butt

1 Boston Butt
Coarse Salt
Freshly Cracked Black Pepper
7 tablespoons self rising flour, divided
7 tablespoons vegetable oil, divided
2 tablespoons onion powder
1 teaspoon garlic powder
1/2 teaspoon celery seeds
1 package brown gravy mix
1 capful kitchen bouquet
1 package Lipton Onion Soup Mix
8 cups water
3 tablespoons cornstarch
3 tablespoons water

Wash and pat dry the Boston butt with paper towels. Season the Boston butt on all sides with coarse salt and freshly cracked black pepper. Preheat oven to 350 degrees. In a Dutch oven or large pan over medium high heat, add three tablespoons of the vegetable oil, toss three tablespoons of flour all over the sides of the Boston butt. Then add the Boston butt to the pan and brown on all sides. After the Boston butt is browned, remove it and place it into a large baking dish and set aside. In the Dutch oven/pan where you browned the Boston butt, add the rest of the vegetable oil and flour, stir with a whisk, add the onion powder, garlic powder, celery seeds, and whisk til browned. Add the gravy mix, kitchen bouquet, onion soup mix, and whisk to combine. Then add the water, whisking the entire time to remove any lumps ( using a whisk works great for this) bring it to a boil, then remove from heat and pour the gravy over the Boston butt. Cover the Boston butt and place it in the oven and bake for 3 hours. Then remove the cover. In a bowl, combine the corn starch and water, stir to combine thoroughly and then pour the cornstarch mixture into the gravy mixture in the pan and stir to thoroughly incorporate. Return to oven and bake an additional 30 minutes. Remove from oven and let rest for at least 15-30 minutes before slicing.
