Ingredients:
2 medium zucchini (approx 10 oz / 300g), grated
1 cup (4 oz / 110g) almond flour, finely ground
1/4 cup (1 oz / 30g) grated Parmesan cheese
1 large egg, lightly beaten
1 teaspoon Italian seasoning blend
1/2 teaspoon garlic powder
Pinch of salt and black pepper
Parchment paper
Directions:
1. Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper.
2. Grate the zucchini. Place the grated zucchini in a clean dish towel or cheesecloth and wring out as much moisture as possible. This is key for a non-soggy crust.
3. In a medium bowl, combine the thoroughly squeezed zucchini, almond flour, Parmesan cheese, beaten egg, Italian seasoning, garlic powder, salt, and pepper. Stir until a dough-like consistency forms.
4. Transfer the mixture to the center of the prepared baking sheet. Using your hands or a spatula, press the mixture out into a thin, even circle or rectangle (about 1/4-inch / 6mm thick).
