π₯©π½οΈ Southern Meatloaf Plate w/ Cheesy Mashed Potatoes & Sweet Corn Beans π§π§π
Classic beef meatloaf loaded with bell peppers, garlic, and bold seasonings. Served with fluffy mashed potatoes topped with melty cheddar and a veggie medley that brings the soul. Comfort food doesnβt get more real than this.
π Ingredients:
For the Meatloaf:
2 lbs ground beef
1 cup breadcrumbs
2 eggs
Β½ cup chopped onion
Β½ cup chopped red & green bell peppers
2 cloves garlic, minced
ΒΌ cup ketchup
1 tbsp Worcestershire sauce
1 tsp onion powder
1 tsp garlic powder
1 tsp smoked paprika
Salt & black pepper to taste
Topping Sauce:
ΒΌ cup ketchup
1 tbsp brown sugar
1 tsp mustard (optional kick)
For the Cheddar Mashed Potatoes:
4 large russet potatoes, peeled & cubed
Β½ cup milk
ΒΌ cup butter
1 cup shredded cheddar
Salt, pepper, garlic powder to taste
Corn & Green Beans Mix:
1 cup canned corn (drained)
1 cup canned or frozen green beans
1 tbsp butter
Β½ tsp garlic powder
Dash of sugar
Salt & pepper to taste
π₯ Instructions:
1. Make the Meatloaf:
Preheat oven to 375Β°F.
Mix all meatloaf ingredients in a large bowl (donβt overmix).
Form into a loaf in a baking dish or loaf pan.
Top with the ketchup glaze.
Bake for 50β60 mins until internal temp is 160Β°F. Rest before slicing.
2. Mashed Potatoes:
Boil potatoes until fork tender.
Drain, mash with milk, butter, and seasonings.
Stir in cheddar cheese. Add more on top if you want it melty π₯
3. Corn & Beans:
SautΓ© corn and green beans in butter with seasonings over medium heat.
Cook until heated through and slightly caramelized.
