Three-ingredient coffee cake
Ingredients:
• 3 eggs
• ¾ cup hazelnut cocoa spread (such as Nutella) (6.7 oz / 200 g)
• ⅓ cup strong espresso coffee (cold) (3.4 fl oz / 100 ml)
• ¾ cup all-purpose flour (3.5 oz / 100 g)
• 1 teaspoon baking powder
Instructions:
1. Preheat the oven to 350°F (180°C) and grease a 6 to 7-inch (15-18 cm) cake pan.
2. Beat the eggs with an electric mixer on high speed for 5-7 minutes, until they triple in volume and become fluffy.
3. Add the hazelnut spread and gently fold it in with a spatula.
4. Sift the flour and baking powder together, then gradually fold them into the batter.
5. Pour in the cold espresso and mix until the batter is smooth.
6. Pour the batter into the cake pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
7. Let it cool before unmolding, then decorate as desired.
