This is what weekends are all about π left is a veggie stew, middle is a veggie chilli and right is a sausage casserole cooking away to be portioned out for the freezer, taking advantage of the really cheap veg in the supermarkets this week!
* Veggie stew:
- swede, carrots, onions, potatoes, leeks, peas
With a weak gravy of about 400ml covering all veg, add two stock cubes, Hendersons Relish (or lee and Perins), salt, pepper and about a 5th of a tea spoon of mild curry powder, all on high for 6 hours π
*Veggie Chilli Con Carne
- tin of tomatoes, Tin of kidney beans, tin of kidney beans, one pepper, onion, 3teaspoons of chilli powder, 3 tea spoons of cumin, tomato on purΓ©e, garlic powder to taste, salt, pepper, oregano to taste, 300ml of thick gravy, two stock cubes, all on high for 5 hours, at the five hours stage, Add the quorn mince, donβt add at beginning because Quorn gives a vingeray taste when slow cooked π
* Sausage Casserole
- casserole pack from Aldi, swede, peas, Casserole pre mix from Aldi (usually above the frozen foods, itβs about 22p) made up with 300ml of water, a weak gravy with 400ml of water, brown off your sausages, cut them up and put them in, on high for 6 hours, when youβre about to serve, add some more gravy but make it like a gravy paste to thicken the casserole up and serve π
