Keto Cream Cheese Cherry Pastries (≈4g net carbs each)
Ingredients (makes 8 pastries)
Dough (fathead style):
2 cups shredded mozzarella cheese
2 oz cream cheese
1 ½ cups almond flour
1 egg
1 tsp vanilla extract
½ tsp baking powder
Cream filling:
6 oz cream cheese, softened
2 tbsp powdered erythritol
1 tsp vanilla extract
2 tbsp heavy cream
Topping:
½ cup sugar-free cherry preserves (or fresh cherries cooked down with erythritol)
Powdered erythritol for dusting
Instructions
Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
Melt mozzarella and cream cheese together in a microwave (about 90 sec), then stir until smooth.
Add almond flour, egg, vanilla, and baking powder. Mix into a dough.
Divide dough into 8 portions. Shape each into a heart (or round if easier), flatten slightly, and press the center to create a small well.
In a bowl, beat cream cheese, erythritol, vanilla, and heavy cream until smooth. Spoon a little into each dough well.
Add 1 tsp cherry preserves on top of the cream filling.
Bake 15–18 minutes until golden brown. Let cool slightly before dusting with powdered erythritol.
