Mini Pecan Pies

Ingredients:

- 2 cups all purpose flour
- 1 cup packed brown sugar
- 1 cup cold butter
- 5 large eggs
- 1 cup dark corn syrup
- ⅔ cup granulated sugar
- 1 teaspoon vanilla extract
- ⅛ teaspoon salt
- 2 cups chopped pecan

Directions:

1. Preheat oven to 350°F (175°C).
2. In a large bowl, combine the flour and brown sugar. Cut in the cold butter using a pastry blender or your fingers until the mixture resembles coarse crumbs.
3. Press the shortbread crust mixture evenly into the bottoms and up the sides of mini muffin tins to form small pie shells.
