Grilled Lobster Tails and Shrimp with Herb-Butter Sauce
Ingredients:
2 lobster tails, halved lengthwise
1 lb large shrimp, peeled and deveined
3 tablespoons unsalted butter, melted
2 cloves garlic, minced
1 teaspoon fresh lemon juice
1/2 teaspoon smoked paprika
Salt and freshly ground black pepper, to taste
1/4 cup grated Parmesan cheese
1 tablespoon fresh parsley, chopped
1 tablespoon fresh thyme, chopped (optional)
Lemon wedges, for garnish
Instructions:
Prepare the Lobster Tails:
Preheat your grill to medium-high heat.
Using kitchen scissors, carefully cut down the center of the lobster shell and gently pull apart to expose the meat.
Brush the lobster meat with melted butter mixed with minced garlic, lemon juice, smoked paprika, salt, and pepper.
Place the lobster tails on the grill, shell-side down. Grill for 5-7 minutes, or until the lobster meat is opaque and slightly charred, basting with additional butter as needed.
Grill the Shrimp:
Toss the shrimp with some of the melted butter, garlic, and a pinch of smoked paprika. Season with salt and pepper.
Grill the shrimp for about 2-3 minutes per side, until golden-brown and opaque. Remove from the grill and set aside.
Prepare the Herb-Butter Sauce:
In a small bowl, combine the remaining melted butter with fresh parsley and thyme. Stir well.
Assemble the Platter:
Arrange the grilled lobster tails on a white shallow platter, ensuring the meat is exposed and slightly charred.
Nestle the grilled shrimp around the lobster tails.
Drizzle the herb-butter sauce over the lobster tails and shrimp, and sprinkle with grated Parmesan cheese for a rich, indulgent touch.
