Mexican bean soup. Was taught how to make this by my ex (he’s Mexican). I don’t measure, but this is what I used:
Fresh cooked pinto beans & their broth
Chopped, cooked bacon
Diced jalapeños
Diced onion
Diced tomatoes
Minced garlic
Fresh cilantro, chopped
Salt (to taste)
Cook the bacon. Add to beans. In the bacon fat, cook onions & jalapeños until tender. Add tomatoes & cilantro. Cook a couple more minutes. Add to beans & bacon. Add salt. Simmer about 20 minutes.
Edit Everyone is telling me these are Charro beans, I wasn't aware of this. My ex's family (all born and raised in central Mexico) called this bean soup. I have had charro beans. They were similar to this but had chorizo, ham and other herbs added to it. Either way, they're all good!
