Pistachio Cardamom Rose Loaf
Ingredients:
For the Loaf:
1 1/2 cups all-purpose flour
1 cup shelled pistachios, finely ground
1 tsp ground cardamom
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3/4 cup unsalted butter, softened
1 cup granulated sugar
3 large eggs
1 tsp vanilla extract
1/2 cup buttermilk
For the Rose Glaze:
1 cup powdered sugar
2-3 tbsp rose water
A few drops of pink food coloring (optional)
For Topping:
1/4 cup chopped pistachios
Dried rose petals (optional)
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a loaf pan.
Prepare Dry Ingredients: In a medium bowl, whisk together the flour, ground pistachios, cardamom, baking powder, baking soda, and salt.
Cream Butter and Sugar: In a large bowl, beat the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract.
Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the butter mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Make the Rose Glaze: In a small bowl, whisk together the powdered sugar, rose water, and pink food coloring (if using) until smooth and thick.
Glaze the Loaf: Once the loaf is completely cool, pour the rose glaze over the top, allowing it to drip down the sides.
Add Toppings: Sprinkle the chopped pistachios and dried rose petals (if using) over the glaze.
Serve: Slice and enjoy!
