Crispy Lemon Herb Tofu Schnitzel 🍋🌿
Ingredients:
- 400 g firm tofu
- 1 cup breadcrumbs (panko preferred)
- 1/2 cup all-purpose flour
- 1/2 cup plant-based milk (e.g., soy, almond)
- 2 tbsp fresh parsley, chopped
- 1 tsp dried oregano
- 1 tsp garlic powder
- Zest of 1 lemon
- Salt and black pepper to taste
- Olive oil for frying
Directions:
1. Press the tofu for 20 minutes to remove excess water, then slice it into 1 cm thick pieces.
2. Prepare three bowls: one with flour mixed with a pinch of salt, one with plant-based milk, and one with breadcrumbs, parsley, oregano, garlic powder, lemon zest, and a touch of salt and pepper.
3. Coat each tofu slice in flour, then dip into the milk, and finally coat with the breadcrumb mixture. Press the crumbs gently to ensure they stick.
4. Heat olive oil in a frying pan over medium heat. Fry each tofu slice for 3-4 minutes on each side until golden and crispy.
5. Serve warm with a squeeze of fresh lemon juice and your favorite side dish.
