Honey caramelizes quickly and can burn easily at high temperatures, so lower the cooking temperature to 400 degrees., and watch your dish closely. You may want to line your baking dish with foil and spray or coat the foil with olive oil. You may also cook the fish for ten minutes, remove from the oven and add the honey and basil and return to the oven to finish cooking, giving the honey enough time to caramelize but not burn.
