Jalapeño Popper Patty Melt
Ingredients:
1 lb ground beef (80/20 for juiciness)
1/2 tsp garlic powder
Salt and black pepper to taste
4 slices sourdough bread
4 slices sharp cheddar cheese
1/2 cup cream cheese, softened
1/3 cup diced pickled jalapeños
1 medium onion, thinly sliced
2 tbsp butter (plus more for bread)
Optional: crushed red pepper or hot sauce for added heat
Instructions:
Prepare Jalapeño Cream Cheese Spread:
In a small bowl, mix softened cream cheese with diced jalapeños. Set aside.
Caramelize Onions:
In a skillet over medium heat, melt 1 tbsp butter. Add sliced onions and cook slowly, stirring often, until golden and soft (about 15–20 minutes). Set aside.
Form & Cook Patties:
Divide ground beef into two large patties, seasoned with garlic powder, salt, and pepper. Grill or sear on high heat for 3–4 minutes per side until nicely charred and cooked through.
Assemble the Patty Melt:
Butter one side of each bread slice. On the unbuttered side of one slice, spread jalapeño cream cheese, then layer with cheddar, a cooked patty, caramelized onions, a second slice of cheddar, and top with another slice of bread (buttered side facing out).
Grill the Sandwich:
In a skillet over medium heat, grill the sandwich on each side until the bread is golden brown and crispy, and the cheese is melted (about 3–4 minutes per side). Press down gently with a spatula for an even crust.
Serve:
Slice in half and serve immediately while hot and gooey. Optional: garnish with a few extra jalapeño slices for extra kick.
