Pickled Cherry Tomatoes, Red Onions, and Zucchini
Ingredients:
- 2 cups cherry tomatoes, halved
- 1 medium red onion, thinly sliced
- 1 medium zucchini, thinly sliced
- 1 cup white vinegar
- 1 cup water
- 2 tablespoons sugar
- 1 tablespoon salt
- 1 teaspoon black peppercorns
- 1 teaspoon mustard seeds
- 1 teaspoon dried oregano
- 1 bay leaf
Instructions:
1. In a large mixing bowl, combine the halved cherry tomatoes, sliced red onion, and sliced zucchini.
2. In a saucepan, combine the white vinegar, water, sugar, salt, black peppercorns, mustard seeds, dried oregano, and bay leaf. Bring the mixture to a boil over medium heat, stirring until the sugar and salt are dissolved.
3. Pour the hot pickling liquid over the vegetable mixture, ensuring all the ingredients are submerged.
4. Allow the mixture to cool to room temperature, then transfer it to a clean jar or airtight container.
