Avocado, Mozzarella, and Tomato Grilled Cheese
Creamy and Flavorful Avocado, Mozzarella, and Tomato Grilled Cheese
Ingredients:
4 slices of your favorite bread (sourdough, whole wheat, or white work well)
1 ripe avocado, sliced
4 slices of fresh mozzarella cheese
1 large tomato, sliced
2 tablespoons fresh basil leaves, chopped (optional)
2 tablespoons butter, softened
Salt and black pepper, to taste
Balsamic glaze (optional, for drizzling)
Directions:
Assemble the sandwich:
Spread butter on one side of each slice of bread.
On the unbuttered side of two slices of bread, layer the avocado slices, mozzarella cheese, and tomato slices.
Sprinkle the chopped fresh basil over the tomatoes if using.
Season with a pinch of salt and black pepper.
Top each sandwich with the remaining slices of bread, buttered side out.
Grill the sandwich:
Heat a skillet or griddle over medium heat.
Place the sandwiches in the skillet and cook for 3-4 minutes on each side, or until the bread is golden brown and crispy and the cheese is melted.
Press down gently with a spatula while cooking to help the sandwich hold together and the cheese to melt evenly.
Serve:
Remove the sandwiches from the skillet and let them cool slightly.
For an extra touch of flavor, drizzle balsamic glaze over the sandwiches before serving.
