2 medium Yukon Gold potatoes, cut into ยฝ-inch cubes
1 tbsp olive oil

4 oz cremini mushrooms, finely chopped
2 tbsp olive oil
2 cloves garlic, minced ๐Ÿง„
ยผ cup fresh basil leaves ๐ŸŒฟ
ยผ cup heavy cream
2 tbsp grated Parmesan cheese ๐Ÿง€
ยผ cup crumbled feta cheese
1-2 tsp hot sauce (adjust to your spice level!) ๐Ÿ”ฅ
1 tbsp lemon juice ๐Ÿ‹
Salt & freshly cracked black pepper to taste
