Sweet and Savory One Pan Honey Garlic Chicken with Roasted Potatoes and Crisp Green Beans
Ingredients:
4 boneless, skinless chicken thighs
1 pound red potatoes, halved
2 cups green beans, trimmed
1/4 cup honey
1/4 cup soy sauce
2 tablespoons olive oil
4 cloves garlic, minced
1 teaspoon dried thyme
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:
Prepare the Marinade:
In a small bowl, whisk together honey, soy sauce, olive oil, minced garlic, dried thyme, salt, and pepper.
Marinate the Chicken:
Place chicken thighs in a dish and pour half of the marinade over them. Let sit for at least 15 minutes.
Preheat the Oven:
Set your oven to 400°F (200°C) and lightly grease a large baking sheet.
Arrange Ingredients on the Sheet:
Spread the halved red potatoes on one side of the baking sheet. Drizzle with a bit of olive oil, salt, and pepper. Add marinated chicken thighs next to the potatoes.
Bake Initially:
Place the baking sheet in the oven and bake for 20 minutes.
Add Green Beans:
Remove the baking sheet, add the green beans to the opposite side, and drizzle with remaining marinade.
Finish Baking:
Return to the oven and bake for another 15-20 minutes, or until chicken reaches an internal temperature of 165°F (74°C) and potatoes are tender.
Serve & Enjoy:
Garnish with fresh parsley before serving. Pair with a side of crusty bread or a simple salad for a complete meal.
