🥘 Easy Chicken Cobbler Dinner Casserole Recipe
Ingredients:
2 cups cooked, shredded chicken (rotisserie works great)
1 cup frozen mixed vegetables (peas, carrots, corn)
1 can (10.5 oz) cream of chicken soup
1 ¾ cups chicken broth
1 cup milk
1 cup Bisquick or other baking mix
½ cup shredded cheddar cheese (optional but tasty)
½ tsp garlic powder
½ tsp onion powder
Salt & pepper to taste
2 tbsp butter (melted)
Instructions:
Preheat oven to 375°F (190°C). Grease a 9x13 baking dish.
Layer the shredded chicken evenly in the bottom of the dish. Top with the frozen veggies.
In a bowl, whisk together the cream of chicken soup and chicken broth. Pour this mixture evenly over the chicken and veggies. Do not stir.
In another bowl, whisk together the Bisquick, milk, melted butter, and cheddar (if using), plus garlic/onion powder. Pour gently over the soup mixture. Again, do not stir—this helps create that layered “cobbler” effect.
Bake uncovered for about 45–50 minutes, or until the top is golden and cooked through.
